500g Carrot Cake Mix
150g grated fresh carrot
3 eggs
100g vegetable oil
Line a 20cm round tin (6cm deep) with baking paper
Place all ingredients in mixing bowl.
Mix on low speed for 1 minute.
Scape down the batter then mix again on medium speed for a further minute.
Pour cake mix into tin.
Bake at 180.C for 50-60 minutes.
