"I have been using your gluten free flour mixes for 5 years now and I think you have the best GF flour mix as it doesn't have a funny taste like others. But, I have a lot more success with general baking (cakes, biscuits, pancakes, etc) if I substitute 3/4 cup your GF flour for every 1 cup of wheat flour in a standard recipe - and leave all the other ingredients the same. Many people (coeliac or otherwise*) comment to me on how soft and moist the cakes turn out when done this way."
